Weeknight Meatballs Recipe | Bon Appetit


Okay these are fantastic! I used ground turkey instead of beef but followed everything else exactly and they were great and SUPER easy to make. I made meatball subs out of them. Highly recommend!
P.S – I used milk, don’t know if it makes any difference

Anyone have a good idea on how to reheat meatballs made ahead of time? Would it be best to do in the oven again or on a stove top with the sauce on them? I’m making them ahead today for dinner tonight for my kids to drop off at their house and I want to give them a quick method as they just had a new baby.

If you overwork the mixture, the meatballs will be chewy and tough, as opposed to light and delicate.

Think about adding fresh garlic, fresh chopped basil and parsley.

Why not use parchment paper ?
They will still brown and you don’t have to fight turning them over 🙂

A suggestion, as I am doing low-carb eating currently. Whenever it calls for bread crumbs or panko, I substitute no carb pork rinds. Put them into a plastic bag and smash them into crumbs. Pour them into a measuring cup and use as if they were crumbs… except no carbs. It’s my go to, especially with meat loaf. Tastes great… less filling. 😁
